Shiitake contains lentinan (beta-glucan approved as anti-cancer adjunct in Japan), eritadenine (cholesterol-reducer — inhibits ACAT, reducing cholesterol absorption by 25%), and L-ergothioneine (rare amino acid antioxidant). Lentinan injection is Japanese-approved for gastric cancer (extends survival when combined with chemo). Oral shiitake extract: 5-10g/day improves immune markers (increased IgA, improved T-cell function). Eritadenine is unique to shiitake — no other food source.
