Ergothioneine is a unique amino acid produced exclusively by fungi and soil bacteria — humans have a specific transporter for it (OCTN1/SLC22A4), suggesting evolutionary importance. It accumulates in mitochondria as a potent antioxidant. Found in mushrooms (esp. oyster, king oyster, shiitake), tempeh, and organ meats.
