Maitake ('dancing mushroom' in Japanese) contains D-fraction beta-glucan that has immune-modulating and anti-cancer research. A 2009 Memorial Sloan Kettering study found maitake D-fraction enhanced NK cell activity by 1.5-2.6x in breast cancer patients. Also shows evidence for blood sugar reduction (improved insulin sensitivity). Grifolan (the specific beta-glucan) activates dendritic cells via dectin-1 receptor.
