Betacyanins are the red-violet pigments in beets (distinct from nitrates — see nitrate entry). The primary betacyanin (betanin) has antioxidant activity 1.5-2x that of vitamin C and inhibits lipid peroxidation. Beet juice benefits are primarily from nitrates (NO production) but betacyanins contribute anti-inflammatory and anti-cancer effects (NF-κB inhibition).
